Feed the homeless...

....Tuppence a plate. (Well, maybe a bit more.) (link)
A GROUP of homeless youngsters are producing a cheap and healthy meals calendar featuring recipes for cooking on a shoestring.

The recipes include simple dishes such as homemade soup, hamburgers and healthy fruit smoothies, with most of the dishes costing less than £2 to make.
"We are giving our young people the opportunity to learn how to make cheap but exciting meals. We will be launching the calendars before Christmas with a view to selling them in charity shops."


Butternut Squash Soup

1 onion, peeled and sliced
1 stick of celery
1 garlic clove
1 butternut squash, peeled
25g butter
150ml single cream
1 litre of water
vegetable stock

Method
Fry onion, celery and garlic in butter until soft. Add water/stock and simmer gently. Chop butternut squash into cubes and place in a baking tray. Roast in a hot oven (200°C) for 20 minutes. Blend the mixture together and then place through a sieve. Reheat if necessary. Add cream and stir through.
Fruit Smoothies

1 large ripe banana
175g (60z) fresh strawberries
150ml (1/4 pint) ice cold skimmed milk
150ml (1/4 pint) low-fat natural yoghurt
1-2 teaspoons runny honey to taste

Method
Peel the banana and slice into a blender. Pour the milk and yoghurt over the top and process for a few seconds or until all ingredients are fully combined. Serve in a tall glass.
