FISH is a fabulous and healthy fast food, but what if you don't have time to shop for the freshest fillets at a good fishmonger? You could instead buy something which benefits from being a few days out of the sea - smoked fish.
Smoked trout and pesto linguine Serves 4 Ingredients • 8oz dried linguine • 4 small smoked trout fillets • 2 tablespoons green pesto • 2 tablespoons reduced-fat crème fraiche • Juice of 1 lemon Method Boil the linguine in a pan of salted boiling water according to the instructions on the packet.
