VOODOO COCKTAIL
Ingredients
50ml rum
25ml rosso vermouth
100ml apple juice
Juice of one lime
25ml sugar syrup
Ground cinnamon
Method
Pour rum, rosso vermouth, apple juice and lime juice into a shaker with ice. Shake and pour into a highball glass over ice and garnish with cinnamon.
JAMAICAN FUNK COCKTAIL
Ingredients
4 orange slices
4 raspberries
37.5ml Appleton Estate V/X or any other full-bodied golden rum
12.5ml Chambord
2 bar spoons soft brown sugar
Squeeze of fresh lime juice
Crushed ice
50ml Champagne
Method
Crush the orange slices and raspberries in a Boston glass, add the other ingredients, fill with crushed ice, stir and top up with Champagne. Garnish with two more raspberries.
BANANAS BAKED IN RUM
Serves four
Ingredients
Butter
2 tablespoons molasses sugar
4 bananas
2 tablespoons dark rum
50g raisins
1 dessertspoon orange juice
1 tablespoon lime juice
Method
Preheat the oven to gas mark 4 (180°C/350°F). Butter a shallow, oven-proof baking dish and sprinkle one tablespoon of molasses sugar over its base. Peel bananas, slice them in half lengthways, and place in the dish. Scatter on dark rum, raisins, remaining sugar, orange juice and lime juice.
Cover with a lid or foil and bake in the oven for around 25 minutes. Remove the foil and bake for a further five minutes. Serve with vanilla ice-cream.
